Perform investigative research studies and conduct highly specialized, complex lipid and functional foods research using analytical methodology including, but not limited to, enzymatic re-structuring of lipids, phenolic acid analysis and antioxidant activity. Analytical isolation, separation, identification, and characterization of lipids and phenolic acids.
Instrumental analysis includes, but is not limited to, Gas Chromatography, High Performance Liquid Chromatography, X-Ray Diffraction, Nuclear Magnetic Resonance, Differential Scanning Calorimetry, Oxidative Stability, and Spectroscopy.
Interpret, compile and organize experimental data, using various computer/internet applications.
Troubleshoot/repair instrument malfunctions and perform scheduled maintenance. Instruct graduate students/visitors in their research experimentation and use of laboratory equipment, safety procedures and handling of hazardous waste materials. Schedule and maintain annual training/certification for all individuals working in the lab. Responsible for purchasing and maintaining property/chemical inventory records. Assist with literature searches, research methodology, write/modify/update lab protocols, and proof read analytical papers/dissertations/thesis.
